- 選用少礦物質的軟水。全國降雪量前幾名的新潟縣的水質為少礦物質的軟水。
用不帶強烈味道的軟水釀造日本酒，造就清爽無雜味的酒質。
這種軟水對於釀出淡麗辛口的日本酒是重要的元素。 - 新潟縣是杜氏的故鄉。在酒廠裡釀酒的人們稱為藏人（KURABITO）、酒男（SAKAOTOKO）或若眾（年輕小夥），其領導人則稱為杜氏（TOJI）。
新潟縣在全日本之中擁有最多由杜氏率領的釀酒技術集團，可說是杜氏的故鄉。
每日在此不斷磨練傳統技藝與嶄新技術的他們便是日本遠近馳名的「越後杜氏」。
