GI Yamagata's highest grade sake, Yamagata Sanga
In order to further advance the level of sake brewing technology and sake rice producers in Yamagata Prefecture, the sake rice of the top winners of this year's contest of will be purchased by the sake breweries that are ranked highest by the evaluation committee in order to produce the finest Junmai Daiginjo. With the cooperation of distributors in the prefecture, the Yamagata Prefecture Sake Brewery Cooperative Association will sell the sake on a limited basis.
*Yamagata Sanga has two breweries, Yonetsuru Sake Brewery and Shuho Sake Brewery. We will send it randomly, but if you have a request, please contact us in advance.
Careful selection of breweriesThe project will be run by several companies that secured the top results at last year's prefectural fair for Junmai Daiginjo sake with a rice polishing ratio of 40% or less. This is a project that can only be done in Yamagata, where sake rice champions and sake brewery champions team up to brew sake that represents Yamagata Prefecture.
Highest grade Junmai Daiginjo sakeYamagata Sanga is an original brand Junmai Daiginjo sake developed by the prefecture and the Prefectural Sake Brewers Association, aiming to be the best in Japan. In addition to the pure water nurtured by the rich nature, we carefully pick the particularly excellent "Yukimegami" rice developed in Yamagata Prefecture that was selected in a contest. For the brewing, only the top one, the ultimate of all Yamagata San sake breweries selected that year will be allowed. The base will be "Yukimegami" rice with a rice polishing ratio of 35%.
