Taste
Refreshing mouthfeel with a crisp flavor
This sake is painstakingly crafted using mountain spring water from a remote region combined with the distinctive “Gohyakumanseki” sake rice cultivated using river terraces in the same area. This is the most premium offering of our GO brand, and the production is limited to a small number of bottles each year. Packed with the blessings of nature, carefully maintained during the fermentation process by our brewers.
Concept
Experience luxury
Droplets are collected from hanging bags as they drip down naturally over time. This method is significantly more time-intensive than the usual wringing out approach. As a result, it is not suited to mass production, and limiting this variety to a small number of precious bottles. Since no pressure is applied, the resulting sake is gentler with less astringency.
Brewery's commitments
-
Mysterious water that flows from snow-covered mountains and river terraces
Known for its heavy snowfall, Tsunan is home to snow-capped mountains over 2,000m in altitude, such as Kirinoto. The refreshing, pristine water sourced from this mountain snow has been recognized as one of "Japan's 100 finest waters." This natural spring water used for brewing sake is ultra-soft in quality and is said to be exquisitely fine and well-balanced.
-
Gohyakumangoku from Tsunan, an iconic sake rice cultivar of Niigata
This company is a sake brewery founded in 1996 in response to requests from local sake rice farmers, towns, and JA in the local area. We are committed to using locally-cultivated “Gohyakumanseki” sake rice from the town of Tsunan, grown by farmers we know personally.
-
Elegant and expansive flavor
