We paid close attention to the form of our items to create shapes for use outside of Japan. We also carefully selected materials similar to those used in the thermal tanks for brewing sake from among more than 200 other materials, then by applying a unique surface treatment to create a stainless steel tokkuri suitable for sake storage. |

This stainless steel Ochoko was made by craftsmen in the Tsubame-Sanjo area of Niigata Prefecture, a world renowned metal processing area. Niigata Prefecture is also known for its sake production, with the largest number of sake breweries of any prefecture in Japan. Because the artisans have a good understanding of metals and sake, they were able to create a Ochoko goes perfectly with sake. Yamagata, Dewazakura Sake Brewery, Special Junmai-shu Shiboritate GenshuThis is a special edition of freshly brewed sake that is only available during the winter. It has a soft rice flavor that is neither too rich nor too thin, and is a perfect match for a variety of dishes. It is made using Dewanosato, a sake rice developed by Yamagata Prefecture for Junmai-shu.
-Sake rice: Dewanosato Kyoto, MASUDA TOKUBEE SHOTEN, Junmai Daiginjo Namazake(Un-pasteurized sake)Kyoto-grown Iwai rice is grown by our contracted local farmers. This is a gem of a brew that retains the soft flavors within the firm structure of the rice, giving it a refined taste.
-Sake rice: Iwai In Niigata, Yoshinogawa produces its own rice, GohyakumangokuShiboritate Junmai Ginjo Genshu. This Junmai Ginjo sake is made by Yoshinogawa through a consistent process from rice cultivation to sake brewing. All of the "Gohyakumangoku" rice grown with great care in the rice fields of the Nagaoka area is used, and the junmai ginjo sake is brewed with great care in the cold climate, making full use of the characteristics of the rice. This is a bottle that embodies the Nagaoka terroir.

YoshinogawaIt is freshly pressed junmai daiginjo sake made by Yoshinogawa, which carries out every step of the process, from the rice harvest to the sake-brewing. While valuing the sense and characteristics of each season, we bring out the best of our handmade sake products. Through the 350-year-long sake culture, the tradition of Tajima Toji is still being passed down from generation to generation.
Yoshinogawa was established in Settaya, Nagaoka City, in Niigata Prefecture, in 1548. We brew sake with both sincerity and care, using only Niigata Prefecture raw materials. Using the soft water "Tenka Kanrosen" drawn from the brewery's well as brewing water, we use the traditional techniques of brewers cultivated over many years.
A pioneer in stainless steel processing
Since our establishment, we have continued to place the utmost importance on hand finishing by artisans. We have produced countless stereotype-defying products that are recognized around the world using techniques honed in Tsubame, a town known for its metal and hardware manufacturing.
