Sado is a scenic island with beautiful nature where Japanese crested ibises (Toki) live. It is also considered a microcosm of Japan for its diversified nature. This is Junmai Daiginjo brewed from Yamada Nishiki sake rice produced in Sado, the only rice cultivated in the area. Its light and elegant taste is reminiscent of fruits such as apple, mandarin and strawberry produced in Sado. Challenge started from rice cultivation in cooperation with local rice farmers
Hyogo Prefecture is the best-known production area of Yamada Nishiki rice, though we use Yamada Nishiki rice cultivated in Sado. Niigata Prefecture is known as the northern limit of Yamada Nishiki cultivation; therefore, producing this type of rice in Sado is considered very difficult. However, our passion for "making sake from locally produced rice" and encounters with local rice farmers have made us endeavor to cultivate Yamada Nishiki in Sado since 2016. It was not a easy path, as we experienced a severe damage due to a typhoon. However, all these challenges resulted in the unforgettable great taste of our sake.
Yamada Nishiki
Junmai daiginjo brewed from Yamada Nishiki rice produced in Sado. While many types of sake are manufactured across Japan, this is the only sake made from Yamada Nishiki cultivated in Sado. Yamada Nishiki, the king of sake rice, is produced in Sado with beautiful nature and brewed carefully. A unique sake made from specialty sake rice of Sado. For preparation water, we use snowmelt soft water that upwells at the bottom of the two mountain ranges lying from north to south of the island, producing a clear and soft taste.
Aroma of apple, mandarin and strawberry
Sado is a place where many fruits are produced, including apples and mandarins. The aromas of these fruits are concentrated in this sake, giving an impressive fresh flavor from the first sip. Enjoy the great taste while imagining strawberry, apple, mandarin and many other fruits. This sake is brewed from Yamada Nishiki and has rich flavor and good balance, matching very well with any type of dish.
Good with food
This is brewed from "Sado's Yamada Nishiki" with a light harmony of various fruits, and goes well with fruity appetizers. It is also good with fish or meat, as it tastes like fruity berry sauce. Recommended for those who love fruity cocktails.
Awards from international competitions
Our sake is highly appraised not just in Japan, but also at international competitions, receiving the Gold Medal at IWC 2019 (International Wine Challenge, Japanese Sake category) and the Gold Medal at Kura Master 2018, a sake contest in Paris. This sake is now attracting international attention.
You can enjoy this sake gently chilled, in a round Burgundy type of wine glass, to emphasize the light and fruity flavor. This sake goes well with salad with tomato or fruits, saute or stew of scallops and prawns, or fish carpaccio.
