Using the king of sake rice Yamada Nishiki, this sake has a refreshing clearness as well as a satisfyingly strong umami and richness. The delicate sweetness enchants you and melts away in your mouth quickly. The mild flavor doesn't ruin the taste of food. Just like a little flower on the street, the soft taste of this sake makes you relax and gently comforts you.
Imaging a gently standing subtle flower
Rojoh-Hana-Ari is named after a Zen dialogue to express our wish to make sake that gives people an emotional enlightenment to be impressed even by a little flower on the street. This is not imaging a flower with showy beauty and strong fragrance, but a subtle flower gently standing by a clear stream in the heart of the Tamba mountains.
Brewing process to keep it fresh
Our focus in sake making is freshness. By brewing throughout the year, we maintain the freshness of our products and provide fresh sake to our customers at all times.
Recommended by a prominent person
This sake was given 92 points by Mr. Robert Parker, a well-known wine critic, and received high praise as a "Sake that surpasses wine." Gaining a great reputation overseas, this junmai daiginjo represents the Kotsuzumi series. Take this occasion to enjoy this junmai daiginjo, which is globally approved.
Water
All water used in our brewing process is from the well on our property (soft water) that comes from the Takeda River in Tamba. As you can read in the Japanese comic book, Oishinbo, it is said, “It’s amazing how, once you take a sip, you can feel the richness of the taste in your mouth, and once you swallow it, it’s gone. This is indeed a crisp and clear sake.” This precious water is a lifeline of sake making in Tamba.
Unique viewpoint
The vivid blue-colored bottle is daring but a little nostalgic with an outstanding sense of presence. With an impressive design which is hard to forget, this sake is recommended as a gift. This original design expresses the world of dreams created by Mr. Hirosuke Watanuki, known as Muhouan. The name, letters and bottle design of Nishiyama Shuzojo's Kotsuzumi are a very unique expression and have gained a great reputation from fans.
This is best served at room temperature or chilled. A traditional sake cup or wine glass is recommended. This sake particularly goes well with delicate dishes such as sushi, which uses seafood as the main ingredient.
