Taste
Fine bubbles permeate the sake from the bottom of the glass.
As delicate and lively bubbles permeate the sake, you can catch a whiff of the sake's exquisite fruity aroma reminiscent of white peach and pear with some hints of citrus. In addition to its mellow sweetness that is perfectly balanced with the vibrant and elegant acidity, this sake creates a fresh impression with the energy of its rising bubbles.
Concept
Yukihotaka, also known as mythical rice
This superior sake is brewed with 100% Yukihotaka rice (a rare subvariety of Koshihikari rice) cultivated locally in Kawaba Village and natural water sourced from Kawaba Village that had captivated the first generation of brewers. This product fully embodies Kawaba Village's terroir, which is a distillation of the village's nature, history, and culture. Enjoy this Awa sake, which has maximized the potential of the rice and locked in its umami notes.

Yukihotaka, the Koshihikari rice cultivated in Kawaba Village
Yukihotaka is an extraordinary rice cultivated locally in Kawaba Village that takes full advantage of the area's natural qualities such as its sunlight, natural water, and climate, and it embodies the passion, dreams, and hopes of the residents of Kawaba Village. The MIZUBASHO Yukihotaka series drew inspiration from this and was developed after extensive research. We hope to bring this sake from Kawaba Village to the rest of the world.
Brewer's recommendations
-
Best served in a champagne flute glass after it is adequately chilled in a wine cooler.
The recommended serving temperature is 5℃ to 8℃. Please refrain from over-chilling the sake, as doing so would make it harder to appreciate its flavors. Chill the sake in the refrigerator for around 3 to 4 hours, or for around 30 minutes in a wine cooler by filling the cooler with ice and water and submerging the bottle to its neck. A temperature that is too high will lead to higher gaseous pressure in the bottle, and its content may be ejected when you uncork the bottle. Please make sure the bottle is adequately chilled before serving.
