A strong and rich aroma reminiscent of the fragrance of dried grains such as soybeans, azuki beans, brown rice, buckwheat, rice grain and Japanese paper, and the bitterness of vegetables and leaves such as daikon radish, turnip, chrysanthemum leaves, pine leaves and magnolia leaves, with a mineral fragrance that settles the overall scent. With a clean and cool mouthfeel, the fluffy taste spreads in harmony with refreshing sweetness. Mild sourness and bitterness bring out the richness, and mixing with the grain-like aroma, the well-balanced and soft flavor spreads.
New junmaishu that you can freely taste with your five senses.
This is a new type of sake for which the specifications such as sake rice brand and acidity are intentionally undisclosed. To sharpen your five senses and allow you to feel them freely, we have made a clear distinction in the design of our products and have renewed our ingredients and brewing methods. However, it also has a taste by which you can recognize the uniqueness of “Tsukino Katsura.” It is a new trial of our brewery, which started in 2021, in the age of enjoying sake with sensibility.
All-rounder junmaishu that is delicious cold or hot.
This is an all-rounder sake that is a standard of junmaishu, which has a light sourness and can be enjoyed either chilled or warmed. This sake is smooth to drink and has a soft and plump flavor. Its subtle sourness, bitterness and rich aftertaste makes it goes well with dishes with a strong flavor and umami. Recommended for simmered daikon radish, deep-fried chicken, pork shabu-shabu (with sesame sauce), butter sauteed mushrooms, oyster and spinach gratin, gomoku yakisoba (fried noodles with various vegetables), Chinese-style blue crab stir fry, etc.
It’s delicious chilled, at room temperature, or warmed!
This is an almighty sake that can be enjoyed chilled around 10℃, at room temperature to bring out the flavor, or warmed around 40℃. Since this sake has a well-balanced and a medium-dry taste, it goes well with any dish and is very versatile.
