Taste

Elegant and smooth, moderately dry

The fragrance of flowers such as plum, lotus, lily, azalea, wisteria and daffodil, and fruit fragrance such as lychee, white peach, green banana, melon, apple and pear come out as the temperature of alcohol rises. There is also a refreshing scent of fern, cedar leaves, fresh green, young bamboo and water trickling out of rocks. It has a good balance of light sweetness and sourness, and the mild taste spreads elegantly. Afterwards, you can feel a dry sensation with a slightly pungent and light bitterness. At the end, the fragrance like a white flower gives you a refreshing sense, leaving a feeling of comfort.

Concept

Junmai Ginjoshu that you can taste freely with your five senses.

This is a new type of sake for which the specifications such as sake rice brand and acidity are intentionally undisclosed. To sharpen your five senses and allow you to feel them freely, we have made a clear distinction in the design of our products and have renewed our ingredients and brewing methods. However, it also has a taste by which you can recognize the uniqueness of “Tsukino Katsura.” It is a new trial of our brewery, which started in 2021, in the age of enjoying sake with sensibility. We would like to recommend it to young people and women.

    This is a new type of sake for which the specifications such as sake rice brand and acidity are intentionally undisclosed. The specifications are not disclosed because we want people to be able to sharpen the five senses and feel subtle aspects of sake sensitively without unnecessary information or images before drinking. Leave your mind to your sensibility and enjoy it as you feel. You will be able to experience a new world of sake that you have yet to reach.

  • Simple and innovative label design

    In accordance with the non-disclosure of specifications, the bottle label has a simple design that avoids stereotypes. This is the work of Issei Kitagawa, a graphic designer from Hyogo Prefecture. The label is unique among the designs by Kitagawa, who is well known at our brewery that actively produces products in collaboration with artists. Kitagawa’s designs are popular among artists all over the world for their originality and wit.

  • Recommended for light-taste cooking or dishes with a good scent.

    With a gentle fragrance reminiscent of flowers and grass, this sake has an elegant and smooth taste, so it goes well with light-taste dishes that suit the sake’s elegance. In addition, the light acidity refreshes the mouth and the aftertaste lasts a little longer, so it goes well with grilled or fried dishes. For example, sillago tempura, broiled matsutake mushroom, grilled conger eel, grilled squid with sea urchin, edible wild plant tempura, deep-fried blowfish, etc. With its smooth flavor and dry aftertaste, you won’t tire of drinking this Junmai Ginjoshu.

  • Sake from a well-known Kyoto brewery

    The brand “Tsukino Katsura” was named by the noble family who rested in our house making sake and accommodating people during the Imperial visit to Iwashimizu Hachiman-gu Shrine, in tribute to our brewery’s practice of sake brewing using clean water from the Katsuragawa River. This is a famous brand with proudly refined traditional taste. This is a representative sake of a brewery in Kyoto, which is also known as a pioneer, producing nigorizake and koshu for the first time in Japan.

Brewer's recommendations

Do not keep it overly chilled. Keep the temperature around 12℃.

Jyunmai Ginjoshu that you can enjoy chilled with a refreshing taste. However, if you leave it overly chilled, the bitterness will increase. Recommended temperature is around 12℃. It goes well with light-taste dishes that suit the elegance of the sake, or with savory dishes such as grilled or fried food.
