Very dry with a nice sharp taste.
Cereal and grain type aroma reminiscent of a dry autumn breeze blowing in the rice paddies and the scent of ears of rice; the taste is not sweet, but well-balanced between umami and a smooth dryness.
Mild aroma and good food compatibility, dry, and able to age well
Selecting the best of the fields where fertilizers were avoided when growing Yamada Nishiki, the rice polishing ratio was purposely kept at 80%, resulting in a dry Junmai sake with a fresh, autumn breeze aroma.
Suitable for warming up
This sake can be served cold, at room temperature, or warmed ( 50-55°C) to show its full potential.
