Mild aroma and dry taste
It is a gentle Ginjo sake with a dry flavor that has been produced using traditional methods without the use of special koji or yeast strains since its launch in 2000. It has a fresh and gentle aroma of white flowers and citrus fruits, a smooth and lustrous palate, and a well-balanced flavor that combines umami, sweetness, and tartness, which is typical of Yamada Nishiki.

A classic product brewed with locally grown Yamada Nishiki and traditional Japan Brewers Association No. 9 yeast.
This dry junmai ginjo sake is brewed in cooperation with the cultivating brewery Izumibashi and local farmers based on the belief that sake brewing starts with rice cultivation. Locally grown Yamada Nishiki rice is polished (flat polishing) to 58% by the brewery, and carefully prepared by hand.
