This is an original Joël Robuchon sake that follows in the footsteps of the late Joël Robuchon, the world's most decorated Michelin-starred chef. It is made to order and brewed in close partnership with a sake brewery using only locally produced ingredients such as rice and water that pay tribute to their terroir.
Brewing the most terroir-conscious sake in Japan
This sake is brewed using water sourced from the Shirakami Mountain Range (one of the rarest sources of ultra-soft water in Japan), the "Akita sake komachi" sake rice cultivar (which is cultivated with spring water), and yeast from Akita Prefecture. The brewing and fermentation process takes place in sake barrels made of cedar from the Shirakami Mountain Range. These sake barrels crafted from rare Akita cedar trees that are over a century old imbue a special richness, umami notes, and a subtle cedar aroma to the sake. The sake is then stored in a natural refrigerator known as a snow room, which is maintained at a low ambient temperature and the appropriate humidity, to age the sake and achieve its superior flavors.

YAMAMOTO Brewery brews its sake in Happo-cho, Akita, at the foot of the Shirakami Mountain Range, a UNESCO World Heritage Site, which is also the site of establishment of Ohmori Construction. Driven by their shared love of their hometown, the two companies collaborated to develop FUKUHACHI, a sake brewed to showcase the unique qualities of the Shirakami Mountain Range. The auspicious name FUKUHACHI was coined by combining Japanese characters from Fukuji (the founder of Ohmori Construction) and Happo-cho, the town where the companies were based. Capturing the original umami notes and complex profile of rice with under-polished grains
A rice-polishing ratio of 80% is used to ensure that the rice grains are not over-polished so that their miscellaneous taste is preserved. The meticulous attention paid to the ingredients and brewing process allows the sake's miscellaneous taste to be transformed into umami notes and a clean and smooth texture to be developed along with a complex and vibrant aftertaste that can be enjoyed not only alongside dishes but also on its own to savor the original taste of Japanese sake.
Recommended to be served at room temperature in a sake cup. Using largely unpolished rice with a rice-polishing ratio of 80% gives the sake a solid body and great depth of flavor that allow it to be paired with meat dishes and other items in French cuisine. With a fruity flavor profile reminiscent of wine, this sake is well balanced with the delicate aroma and richness of rice.
