A sake with refreshing hints of herbs such as lemongrass and thyme. In the mouth, you will sense a beautiful citrus acidity in addition to the the intrinsic flavor of rice. This sake offers light bubbles and a soft, gentle taste.
A dry sparkling sake which is not sweet
A dry sparkling sake that has kept sweetness to the absolute minimum thanks to the dedication of our chief brewer. In-bottle secondary fermentation, light bubbles, the delicious flavor of soft rice and the beautiful acidity offered by white koji all contribute to the creation of a distinctive sake.
Only white koji is used for the fermentation
White koji is the only type of koji used used for the yeast starter and sake mash. Rich in citric acid, this sake provides the acid required when consumed with meals.
Entire production process is by hand
The entire process from in-bottle secondary fermentation to riddling and the removal of sediment is done by hand.
High-temperature saccharification white koji yeast mash
In addition to high-temperature saccharification, the use of white koji allows us to avoid adding extra lactic acid and perfect the yeast starter in about two days.
Just like champagne, this sake should be thoroughly chilled before being served. It can also be enjoyed like a cocktail by adding a slice of lemon or a touch of Japanese pepper.
