Our motto is to seek out knowledge to create new sake that excites and delights our customers, instead of sticking with what we know. By using both cutting edge and traditional techniques, we seek to create new modern flavors and brewing methods that will stand the test of time.

Future-proof brewing methods
Our company’s brewery preserves the original “Nada” style of brewery architecture from the time of our founding. We aim to develop future-proof brewing methods in cooperation with farmers by deftly incorporating traditional techniques in the manufacturing process, such as using the lever-based “Ishigake Shiki Tenbin Shibori” pressing technique used at just 5 breweries in Japan, including our company, in addition to efficient mechanical presses.

Regional characteristics

TANAKA SHUZO
Harimaʼs grain-producing region has vast areas of mineral-rich clay agricultural land, and there are large daily temperature variations during the period when rice grains are ripening. This climate and the natural environment positively impact the Yamada-Nishiki rice in terms of the shape of the shinpaku and the low levels of fat and protein, making this rice variety an excellent raw material for brewing sake.
