- Our company’s brewery preserves the original “Nada” style of brewery architecture from the time of our founding. We aim to develop future-proof brewing methods in cooperation with farmers by deftly incorporating traditional techniques in the manufacturing process, such as using the lever-based “Ishigake Shiki Tenbin Shibori” pressing technique used at just 5 breweries in Japan, including our company, in addition to efficient mechanical presses.

Harimaʼs grain-producing region has vast areas of mineral-rich clay agricultural land, and there are large daily temperature variations during the period when rice grains are ripening. This climate and the natural environment positively impact the Yamada-Nishiki rice in terms of the shape of the shinpaku and the low levels of fat and protein, making this rice variety an excellent raw material for brewing sake.
