Shimotsuke Toji is the youngest group of master brewers, created in Tochigi in 2001. What makes them unique is their flexible approach to trying new sake techniques.
In the past, Tochigi entrusted sake brewing to groups like the Echigo Toji and Nanbu Toji. Seeking to develop Tochigi's own sake brewing culture, young local brewers came together to form their own group.
The sake made by the Shimotsuke Toji has won multiple gold awards at the Zenkoku Shinshu Kanpyokai and has received high praise.
Prefecture description

Tochigi Prefecture is located north of Tokyo, and part of the prefecture is designated as Nikko National Park. The park is covered with cedar trees and is home to the volcanic Mt. Nantai, and next to it is Lake Chuzenji, a lake formed by the eruption of Mt. Nantai. At the eastern end of the lake is the picturesque 97-meter-high Kegon Waterfall. Nikko Toshogu Shrine is located in the western part of Tochigi Prefecture. Tokugawa Ieyasu, the first shogun of the Edo shogunate, is enshrined at this elaborately gold-decorated shrine.
