Niigata

Sake features

Niigata is one of the top sake producers in Japan.
It is also well-known for its heavy snowfalls, and the meltwater is so beautiful that it is selected as one of the top 100 famous waters, making it possible to brew smooth and fine sake.
In addition, the water also allows for cultivating excellent brewer's rice, making it one of the leading sake producing areas in Japan.
Sake there is predominantly light and dry, although there is a wide range of types, from those that pair well with refreshing meals, to those that have a rich umami flavor and should be savored.
The breweries consider each other worthy rivals, working to outdo each other with the best sake that expresses their unique approach.

Regional characteristic

  • The sake is made with soft water with few minerals.
    Niigata, which boasts one of the highest snowfalls in Japan, has soft water with few minerals.
    By brewing sake with soft water free of off-flavors, the result is a refreshing and clean taste.
    This soft water is also a key factor in making sake of the light and dry variety.
  • Niigata Prefecture is the home of the largest group of chief brewers.
    At sake breweries, the people who make the sake are called brewers, "sake men," or the "young men." Presiding over their work is the chief or master brewer. Niigata Prefecture is where the largest professional group of these master brewers can be found.
    The Echigo Toji, as they are called, are considered one of the pinnacles of sake brewing, and they continue to refine the art while respecting traditions.

Prefecture description

Niigata
Niigata Prefecture is located along the Sea of Japan on the Honshu main island. It is known for its ski resorts, national parks, and many hot springs; there is also a remote island off the coast called Sado Island. Niigata City, where the prefectural capital is located, is famous for its seafood, as well as a large aquarium, Marinepia Nihonkai.
