Sake features

Sake in Kanagawa Prefecture is characterized by being high-quality and handmade, with the rice polishing ratio in the prefecture as a whole being very high compared to the national average.
This is due to the fact that many of the 13 sake breweries in the prefecture are relatively small, so they are focused on deliberate, careful sake brewing and make use of the local water from the Tanzawa Mountains.

Regional characteristic

  • Water from the Tanzawa Mountains is among the three most famous waters of Japan, along with water from Hakkoda Sukayu in Tohoku and water from the Yoro Mountains.
    The Sagami River and the Sakawa River, which originate at the Mt. Tanzawa range, flow into Kanagawa Prefecture.
    TAmong the Top 100 Famous Waters selected by the Ministry of the Environment are the Shasui Falls and Takizawa River in Yamakita-cho, the Shimizu of Kobo in Hadano, the Imaizumi Spring Pond, Soya Shrine, and the Shungan Water Source, a variety of water sources found in the Hadano Basin.
    T The water in Kanagawa Prefecture, which is highly regarded by the national government, has gained a reputation for not deteriorating even when on long voyages beyond the equator. Even today, ships calling into port at Yokohama and Yokosuka stock up not only on food, but always go back with water from Kanagawa.
    Sake breweries in the prefecture are distributed along the Sagami River and the Sakawa River in order to make use of this famous water. The abundant underground water from the river is then used as brewing water.
    T Since water forms about 80% of sake, it is also referred to as "the lifeblood of sake.
    " In this way, the foundations of sake brewing in Kanagawa Prefecture are supported by water from Mt. Tanzawa.

Prefecture description

Kanagawa
Kanagawa Prefecture is located just south of Tokyo and faces the Pacific Ocean. The prefectural capital is Yokohama in the eastern part of the prefecture, and there is a large Chinatown there with food stalls and restaurants. There is also the Sankeien Garden, where traditional landscaping techniques can be found packed in one place, and the Landmark Tower, a skyscraper with a rooftop garden. At the Osanbashi Pier, there is a waterside promenade, and one can find shops lining it. Kawasaki City, known for Kawasaki Daishi temple, is located in the northeastern part of the prefecture.
