Brewery's commitments to sake making
- Refined Traditional Techniques
- Water from the depths of a cave dug into the bedrock of the Chichibu paleozoic strata, mountains and lush verdure, clear Okutama air, the finest rice, and refined techniques. SAWANOI puts all of its effort into sincerely and diligently bringing all of this together to create beautiful sake.
History and culture of the brewery
- A brewery with a 300 year history
- Ozawa Shuzo brews SAWANOI sake, and was founded in 1702, in Sawai-mura, Bushu, on the road connecting Edo and Koshu. It has been known as the local sake of Okutama, Tokyo, for more than 300 years. The name "SAWANOI" is derived from the name of Sawai-mura, which was in turn named after the abundant, flowing water.
A town of tradition and nature
Ome City is located in the northwestern area of Tokyo. Its city center developed as a post town along the Ome Kaido Highway, and was known for cotton textiles, popular for Ome stripes and Ome cotton. The Tama River runs west to east through the center of the city, and forestry thrives in the mountains of the area. Ontake Valley, where the brewery is located, is a beautiful valley, and was chosen as having among the 100 best waters in Japan. There is a promenade along the river where visitors can enjoy nature during any seasons.
Known for its water and right nature
The brewery is located in the rich nature of the Chichibu-Tama-Kai National Park, and the deep Ontake Valley upstream of the Tama River. The Sawai area, where SAWANOI was created, is famous for its clear, abundant water.
