Being small-scale allows us to make handcrafted flavors, and we have been carrying forward the tradition of brewing local sake—rooted in the nature and climate of the region.We craft pure local sake born from a drop of nature's bounties.
From the Land of River Terraces

This land is said to have the largest river terrace in Japan. The plateaus of Tone Numata sprawl above beds of sand and gravel deposited by lakes and rivers across eons. Layers of sand and gravel give rise to pristine filtered water that flows from various places surrounded by mountains and forests. That water, in turn, provides moisture to the land and forms fields. With serene, scenic beauty, it is a region nurtured by mother nature herself.
Koshihikari from Shirasawa

The paddy fields in this area are parted into many small steps. The water that saturates these fields is cold and plentiful—contributing greatly to the growth of rice. The long hours of sunlight from the time of rice planting in May through early summer, combined with the difference in temperature between day and night during the sprouting season in summer, create a beneficial environment for the rice. The foundation of such wholesome, favorable conditions nurtures the Koshihikari rice from Shirasawa.
