Niigata's characteristic cold winter is an essential factor in producing delicious sake. Snow cleans the air. Clean air is a vital element for the growth of koji and yeast, which are essential for sake. Additionally, during winter, the temperatures do not fluctuate drastically and this allows the sake to steadily develop. It is one of the reasons why Niigata's sake is so refined.

Soft water from melted snow, ideal for sake brewing
Niigata boasts one of the heaviest snowfalls in Japan. Brewers use soft spring water, which is low in mineral, from the high Echigo Mountains. This soft water makes the sake soft and mellow. Because breweries in Niigata use this excellent water, all of their sake is delicious.

Shirataki Brewery
Shirataki is a brewery in the Uonuma region of Niigata Prefecture, which has one of the world's heaviest snowfalls. The abundant snow melts in the spring and seeps into the ground, becoming clear groundwater over roughly 50 years. The water from the three wells on the company's property is soft water suitable for sake brewing and serves as the foundation for all of Shirataki's sake production. It defines Shirataki's quality of sake. -
