Founded in 1886. The village of Kawaba is located at the headwaters of the Tone River in the northernmost district of Gunma Prefecture. Founder Shoji Nagai was captivated by the water of this area and began brewing sake with it. To protect this supply of water, the most important ingredient in sake, he purchased the wooded land that stood to the north of his warehouse and took ownership of this deep forest.
The brewery is surrounded by nature, with rice paddies spreading out in front of it as far as the eye can see.

Yukihotaka Koshihikari rice, grown in Kawaba

Yukihotaka, the variety of Koshihikari rice cultivated in Kawaba, is grown under the careful management of farmers each year using the natural, mineral-rich waters that gush forth from Hotakayama, one of Japan’s hundred famous mountains.
This elusive rice is a treasured variety not widely distributed.
It is famous as a variety permitted for presentation at the imperial court to the Emperor and Empress of Japan as the new crop of the year. In recent years, judges have recognized the substantial merits of its quality with awards such as consecutive gold prizes at the International Contest on Rice Taste Evaluation.
This elusive rice is a treasured variety not widely distributed.
