- We are a family-owned brewery that was founded in 1920. We abolished the chief brewer system in 1999 and have since been brewing sake under our current system for 23 years. Our employees work together closely to brew Ishizuchi's sake according to our brewery's plans and other guidelines while adhering to our motto of working in a manner that is efficient, reliable, and meticulous.

Our brewery is located in Saijo City of Ehime Prefecture, an area in the vicinity of Mt. Ishizuchi (the highest mountain in west Japan) that is famous for its quality water.
With Saijo's Shuso Plains in the background home to many granaries, we brew our sake using the pristine water that flows from Mt. Ishizuchi in a setting that boasts the perfect climate and environment for sake production.

Our brewery is located in Saijo City of Ehime Prefecture, an area that is famous for its quality water since ancient times. The pristine, ultra-soft water that flows continuously from Mt. Ishizuchi can be drawn directly from a well at our brewery to brew our sake. We believe that the refreshing aroma, clean taste, and velvety softness of our sake are a result of using this exceptional water.
