While valuing the sense and characteristics of each season, we bring out the best of our handmade sake products. Through the 350-year-long sake culture, the tradition of Tajima Toji is still being passed down from generation to generation.
The fragrance of flowers such as plum, lotus, lily, azalea, wisteria and daffodil, and fruit fragrance such as lychee, white peach, green banana, melon, apple and pear come out as the temperature of alcohol rises. There is also a refreshing scent of fern, cedar leaves, fresh green, young bamboo and water trickling out of rocks. It has a good balance of light sweetness and sourness, and the mild taste spreads elegantly. Afterwards, you can feel a dry sensation with a slightly pungent and light bitterness. At the end, the fragrance like a white flower gives you a refreshing sense, leaving a feeling of comfort.
Recommended for light-taste cooking or dishes with a good scent.

A strong and rich aroma resmallscent of the fragrance of dried grains such as soybeans, azuki beans, brown rice, buckwheat, rice grain and Japanese paper, and the bitterness of vegetables and leaves such as daikon radish, turnip, chrysanthemum leaves, pine leaves and magnolia leaves, with a mineral fragrance that settles the overall scent. With a clean and cool mouthfeel, the fluffy taste spreads in harmony with refreshing sweetness. Mild sourness and bitterness bring out the richness, and mixing with the grain-like aroma, the well-balanced and soft flavor spreads.
All-rounder junmaishu that is delicious cold or hot.
This is an all-rounder sake that is a standard of junmaishu, which has a light sourness and can be enjoyed either chilled or warmed. This sake is smooth to drink and has a soft and plump flavor. Its subtle sourness, bitterness and rich aftertaste makes it goes well with dishes with a strong flavor and umami.

For example, you can smell lime, sudachi, young pineapple, young orange, unripe plum, kiwis fruit and green apple, as well as elegant flowers such as daffodils, violets and wisteria. With a refreshing taste, the soft sweetness and sharp and firm acidity are exquisite. Light bitterness is added from the middle, and you can enjoy the best balance by bringing out the light and fluffy taste. The sharpness of the aftertaste is comfortable.
Celebratory sake inheriting Kyoto’s traditional culture
In the middle of the Muromachi period (around 1400) among more than 300 sake breweries in and around Kyoto, “Yanagizake” in Kyoto City made “Yanagi,” the first brand-named sake in Japan. Our brewery inherited the brand name. There is a custom from long ago to bring “Yanagidaru,” a type of wooden cask made of willow tree, to a celebration. The sound of “Yanagidaru” can be interpreted as expressing a wish of “great happiness inside the home,” and it also means good fortune.
