Concept
16-year-old authentic sake
We used Junmai Daiginjo made using 100% A-grade district Yamada Nishiki cultivated in Miki City, Hyogo Prefecture, which produces a large amount of Yamada Nishiki rice, for the shubomai, kojimai, and kakemai, storing it at low temperatures and aging it at room temperature for over 16 years to create a mature sake. It won bronze four times in 2016, 2017, 2020, and 2021 at the IWC, the world's largest wine competition, in the vintage category.

For the kojimai and kakemai, our Junmai Daiginjo luxuriously uses this A-grade district Yamada Nishiki rice. -

The fierce cold winter mornings characteristic of basins together with natural features that produce soft water are ideal for brewing sake.
