    Saura (Urakasumi)

Founded in 1724 in Shiogama, Miyagi Prefecture, a port city blessed with beautiful nature and bountiful seafood. Carrying on the techniques of the Nanbu Toji school of sake brewing and pursuing the highest quality, they are committed to using local varieties of rice like Sasanishiki, and work to create sake which complements the local culinary culture.
  • Niigata

    Yoshinogawa

Yoshinogawa was founded in 1584 in Settaya, Nagaoka, Niigata Prefecture. They are committed to using ingredients produced locally, and put their whole hearts into brewing sake. The soft water used for brewing is drawn from the brewery’s well, called Tenka Kanrosen, and the brewers use traditional techniques cultivated over generations.
  • Ehime

    Ishizuchi Shuzo Corporation

Ishizuchi's sake brewing is centered on the brewer's family. Since the brewery was founded in 1920, they had a Toji system, meaning that the brewery was led by a Toji, but this system was abolished in 1999 and the brewery is now in its twenty third year under the current system. Believes in reliable, meticulous work that is free of waste based on innovations like brewing plans, all employees combine their strengths to brew Ishizuchi sake.

Details This sake is brewed using Gohyakumangoku sake rice cultivated in Niigata Prefecture and heat-treated right after it is pressed before the sake is gradually aged over the summer.

  • Ishizuchi Shuzo Corporation

This smooth Junmai Ginjo sake has an elegant ginjo aroma worthy of its use of premium Aiyama rice produced in Hyogo Prefecture.
Product name Ishizuchi Junmai Ginjo Aiyama 50 Hiyaoroshi
Details Aiyama is a precious sake rice cultivar that has its roots in both the original Omachi cultivar and the Yamada-nishiki cultivar, the king of sake rice.
The cultivation of Aiyama rice is limited to certain areas in Hyogo Prefecture as its large grain size and tall straws cause it to be prone to falling over, making it a challenging variety that few farmers grow despite its superior qualities.
The smooth umami hints of rice that are distinctive of Ishizuchi sake are coupled with complex, three-dimensional notes to create a flavor profile with multiple layers like a juni-hitoe outfit.
Information -Sake rice: Aiyama rice produced in Hyogo Prefecture
    -Rice polishing ratio: 50%
    -Alcohol content: 16%
    -Sake meter value: -2
